Speedy Lunch Time Chickpea Masala
Posted by Charlotte Nutland onOne of my favourite go-to quick and easy lunch time meals. I often make this before work sometimes if i'm in a rush but know I have a busy day and need something warming, nourishing and tasty. Its packed with good stuff and even just making it feels really wholesome as you smell the incredible spices cook.
This recipe takes approx 10 minutes to prep!
You will need:
- 1 tbsp olive oil
- 2 onions, finely chopped
- 2 garlic cloves, chopped
- 1 tsp garam masala
- 1 tsp turmeric
- 1 tsp ground coriander
- 1 x can of 400g plum tomatoes
- 1 x can of 400ml coconut milk
- 2 good handfuls of red lentils
- *Only if you have time. Any vegetables you have in the fridge, I love using chestnut mushrooms and spinach.
- 400g can chickpeas, drained and rinsed
- ½ small pack coriander, roughly chopped
How to:
- Finely chop 2 onions, 2 garlic gloves and set to the side
- Pop into a cup your spices and set to the side
- In a large pan heat up to 1 table spoon of oil
- Add in your onions and cook until softened
- Add garlic and your cup of spices, stir until combined
- Pop in your can of plum tomatoes and stir, add coconut milk, any extra vegetables and red lentils. Bring to the boil, then simmer and let it cook until the sauce has got abit thicker
- Pop in your can of chickpeas (don't forget to drain and rinse before hand)
- Serve with fresh coriander
- Add rice if you're in the mood for abit more or serving for a longer lunch
- Enjoy every moment
