🥣 Seasonal Recipe – Spring Pea & Mint Soup
Ingredients:
· 1 tbsp olive oil
· 1 small onion, chopped
· 2 garlic cloves, minced
· 500g frozen or fresh peas
· 750ml vegetable stock
· A handful of fresh mint leaves
· Salt, pepper & a swirl of oat cream to serve
Method:
1. Gently sauté onion and garlic in olive oil until soft.
2. Add peas and stock, bring to a simmer for 5–7 minutes.
3. Stir in mint, blend until smooth. Season to taste and serve warm with crusty sourdough.
This vibrant soup is a May favourite—fresh, light, and full of vitality.
