Easy Sunday Baking - Orange and Polenta Cake

🍊 Easy Healthy Orange & Polenta Cake 

Ingredients:

  • 200g ground almonds

  • 100g polenta (medium-ground cornmeal)

  • 1½ tsp baking powder (gluten-free if needed)

  • 2 large eggs

  • 100ml olive oil 

  • 100ml honey or maple syrup

  • Zest of 2 oranges

  • Juice of 1 orange

  • 1 tsp vanilla extract

  • Pinch of salt

Optional glaze (for extra flavour):

  • Juice of 1 orange

  • 1 tbsp honey or maple syrup


Method:

  1. Preheat oven to 160°C (fan) / 180°C / Gas mark 4. Grease and line a 20cm round cake tin.

  2. Mix dry ingredients: In a bowl, combine ground almonds, polenta, baking powder, and a pinch of salt.

  3. Whisk wet ingredients: In another bowl, whisk together eggs, olive oil, honey/maple syrup, orange zest, orange juice, and vanilla.

  4. Combine: Pour wet ingredients into the dry and stir until just combined.

  5. Bake: Pour into the tin and bake for 35–40 minutes, or until golden and a skewer comes out clean.

  6. (Optional glaze): While still warm, poke a few holes in the top and drizzle over the glaze made by gently warming orange juice and honey together.

  7. Cool & serve: Let it cool in the tin for 10 minutes, then transfer to a wire rack. Delicious warm or at room temp!
