Easy Sunday Baking - Orange and Polenta Cake

Ingredients:

200g ground almonds

100g polenta (medium-ground cornmeal)

1½ tsp baking powder (gluten-free if needed)

2 large eggs
-
100ml olive oil
-
100ml honey or maple syrup
-
Zest of 2 oranges
-
Juice of 1 orange
-
1 tsp vanilla extract
-
Pinch of salt
Optional glaze (for extra flavour):

Juice of 1 orange

1 tbsp honey or maple syrup
Method:

Preheat oven to 160°C (fan) / 180°C / Gas mark 4. Grease and line a 20cm round cake tin.

Mix dry ingredients: In a bowl, combine ground almonds, polenta, baking powder, and a pinch of salt.

Whisk wet ingredients: In another bowl, whisk together eggs, olive oil, honey/maple syrup, orange zest, orange juice, and vanilla.

Combine: Pour wet ingredients into the dry and stir until just combined.

Bake: Pour into the tin and bake for 35–40 minutes, or until golden and a skewer comes out clean.

(Optional glaze): While still warm, poke a few holes in the top and drizzle over the glaze made by gently warming orange juice and honey together.

Cool & serve: Let it cool in the tin for 10 minutes, then transfer to a wire rack. Delicious warm or at room temp!
