Simple and delicious Scones

Classic Scones (Quick & Easy)
Serves: 8 | Prep: 5 mins | Cook: 10 mins | Ready in: 20 mins
Perfect for unexpected guests or a weekend treat. Can be halved, doubled, or frozen.
Ingredients

350g self-raising flour (plus extra for dusting)

1 tsp baking powder

¼ tsp salt

85g butter (cold, cut into cubes)

3 tbsp caster sugar

175ml milk
-
1 tsp vanilla extract
-
A squeeze of lemon juice
-
1 egg, beaten (for glazing)

Jam & clotted cream (to serve)
Method
1. Preheat the oven
Heat to 220°C / 200°C fan / gas 7. Place a baking tray inside to warm up.
2. Mix the dry ingredients
In a large bowl, mix the self-raising flour, salt, and baking powder.
3. Rub in the butter
Add the butter and rub it in with your fingertips until the mixture resembles fine crumbs. Stir in the caster sugar.
4. Prep the milk
Warm the milk in the microwave for 30 seconds. Stir in the vanilla extract and a squeeze of lemon juice, then set aside briefly.
5. Make the dough
Make a well in the dry mixture and pour in the milk mix. Use a cutlery knife to combine—don’t overmix. It will look a bit sticky.
6. Shape and cut with hands
Flour your surface and tip the dough out. Flour your hands and fold the dough gently a few times to smooth it. Pat into a round 4cm thick.
Create 8 little balls and gently press to flatten a little
7. Glaze and bake
Brush tops with beaten egg. Carefully place on the hot baking tray and bake for 10 mins until risen and golden.
8. Serve
Enjoy just warm or cold, on the day of baking, with jam and clotted cream.
