Buckwheat and Feta Pancakes -A 10 minute lunch

If you're looking for a tasty, filling, healthy and really satisfying lunch these Buckwheat, tomatoes and Feta Pancakes are for you.
Ingredients
- 100ml of Buckwheat
- 300ml of Soy Milk or preferred Milk
- 2 Tablespoons of Flax Seed Ground
- 2 Eggs
- A handful of Vine Ripened Tomatoes
- A handful of Rocket
- A handful of Basil
- A handful of Spinach
- Spring Onions
- Feta Cheese
- Salt
- Olive Oil
How to:
- Add 2 eggs, 300ml of Milk, 2 Tablespoons of ground flax seed and 100ml of Buckwheat flour to a bowl and whisk with a handheld whisk
- Make a small salad in a bowl with salad ingredients, chop everything very finely
- Chop Feta into small cubes
- Pour a tablespoon of olive oil into a pan and heat up for a few minutes
- Pour mixture gently into the heated pan, allow the pancake to fill the pan, aim for a thin pancake
- Heat on 1 side until bubbles appear and gently life at the edges to check you're ready to flip, repeat the process on the other side
- Turn onto plate and add your salad and feta to one side of the pancake and roll
- Enjoy
